Homemade Chicken Nuggets

I was given an Annabel Karmel cookbook when I was pregnant from special friends of mine. I have made many of the recipes and have just started to make my sons meals more interesting by using biscuit cutters to make fun shapes.

The ‘Heart-shaped Chicken Nuggets’ were really easy to make and my son loved them and was happy to eat them without any sauce for dipping. There are a few recipes for chicken nuggets by Annabel Karmel online and I’m keen to try the one with buttermilk next time.

Heart-shaped Chicken Nuggets

375g chicken breast fillets , cut into chunks

1 large onion peeled and diced

2 tblspn chopped fresh parsley

1 small apple peeled and grated

45g fresh white breadcrumbs

1 chicken stock cube crumbled

60g dry breadcrumbs

60 cheese and onion flavour crisps finely crushed

vege oil for frying

1. Put the chicken, onion, parsley, apple, fresh breadcrumbs and chicken stock cube into a food processor and mix until well combined. take the mixture out and shape into a large flat disc.

2. Use a 6cm heart-shaped biscuit cutter to press heart shapes into the mixture.

3. mix the dry breadcrumbs and crushed crisps together on a plate and press onto the heart-shaped pieces.

4. Heat enough oil for shallow frying in a large frypan and cook hearts for about 3 minutes on each side or until golden and cooked through.

  2. I tried to make these last night and it was an utter disaster. The mixture was way too wet to do anything with it, including cutting out shapes. I tried adding more chicken, more fresh bread crumbs, and even flour to firm it up, all to no avail. Any ideas?
