On a cold wintry night it’s hard to resist the temptation to indulge in puddings as real comfort food. This Lemon Delicious Pudding by Donna Hay (Modern Classics 2 Cookbook) is really tangy and perfectly light. It is quite easy to make and ideal for that midweek treat.
My cookbook said to make it in 4 x 1 and a 1/2 cup ramekins but this same recipe online suggests making it in a large 1 litre dish which would be more ideal. I served my puddings with vanilla ice cream.
